Low-Fat Garlic Broccoli with Lemon Pepper Chicken – 2 servings

 

Ingredients:

  • 2-3 boneless chicken breasts washed and patted dry
  • cover (generously both sides) with Lemon Pepper Seasoning
  • broil until cooked through
  • 1 large Head or 2 packages of frozen broccoli (chopped)
  • 2 tsp. minced garlic
  • ¼ - ½ tsp. cayenne pepper
  • 1 tbls. Olive oil
  • ¾ cup warm water

 

Directions:

Sauté garlic and cayenne pepper in olive oil. Add water and b4occoli and cook until desired tenderness.

While above is cooking, boil 1 box of Penne Pasta.

When chicken is done, cut into bite sized pieces. Combine with cooked drained pasta and the broccoli.
